Houston native Ricky Craig turned a simple idea into a Texas legend. Inspired by his grandmother’s home-cooked meals and Houston’s diverse food culture, Ricky built Hubcap Grill in 2008 to capture the soul of the city he loves: authentic, bold, and unforgettable.

From the beginning, he refused shortcuts, insisting on hand-formed, never-frozen chuck patties, artisan buns, and fresh toppings sourced from local suppliers. The result was a burger joint that immediately stood apart. The Houston Chronicle called him “the high-strung, exacting face of Houston’s hamburger renaissance,” while Eater Houston praised his “cook-to-order” philosophy and relentless attention to quality.

His creativity reshaped the burger scene with cult favorites like the Philly Cheesesteak Burger, Sticky Monkey Burger, and Greek Burger. Along with craft fries, old-fashioned sodas, and local beers, each location still delivers the same warm, neighborhood energy Ricky envisioned. 

His leadership style remains personal and hands-on.  He tours kitchens, checks every system, and keeps standards high enough to win Food Network’s “Top 10 Best Burgers in America.”

What began as a single counter in downtown Houston has grown into a beloved brand with multiple locations and a loyal following. Ricky’s journey from family inspiration to national recognition embodies the heart of Hubcap Grill: real food, genuine hospitality, and the spirit of the local community served on every plate.

  David Mosberg brings over 25 years of executive experience in business administration, acquisitions, and turnarounds. His career has centered on helping companies grow profits, strengthen operations, and elevate customer experience—all while building long-term systems that last.

A former professional chef turned business strategist, David combines a deep respect for hospitality with the financial and operational discipline that franchising demands. Over the past two decades, he’s guided small and mid-sized businesses through transformational growth, and over the last five years has focused on turning entrepreneurial concepts into sustainable legacies.

When the opportunity arose to partner with founder Ricky Craig, David recognized something extraordinary in Hubcap Grill, a concept with the soul of a neighborhood burger joint and the potential to scale into a national franchise. His vision, structure, and financial acumen have helped lay the foundation for Hubcap’s next era of disciplined, high-integrity expansion. 

From site selection and operational oversight to brand strategy and franchisee support, David ensures each new location delivers the same quality, profitability, and guest experience that made Hubcap Grill famous.

David’s leadership style is collaborative and values-driven. 

He believes the best brands are built through people, not spreadsheets, and that every franchisee deserves a pathway to long-term financial independence. “My passion,” David says, “is helping business owners take their unique gifts and turn them into lifelong financial legacies.”

Beyond his professional achievements, David is deeply rooted in his community. He and his wife, Marla, live in Montgomery, Texas, where they raise their three children. He volunteers teaching Dave Ramsey’s Financial Peace University and leads youth classes on money management and entrepreneurship. His commitment to service mirrors Hubcap Grill’s culture of authenticity, generosity, and community impact.

Ashley Schmid serves as Vice President of Franchise Development for Hubcap Grill, where she leads national growth and ensures every new partner enters the system with clarity, confidence, and long-term support.  Known for her insight, empathy, and results-driven approach, Ashley is the spark that ignites meaningful connections between strong operators and a brand built to last.

Her passion for franchising runs deep. 

Ashley grew up watching her family invest everything they had into a franchise opportunity experiencing firsthand the triumphs and challenges that come with ownership. Those years of success, struggle, and limited franchisor support shaped her philosophy: every franchisee deserves the tools, training, and personal guidance to truly succeed. That early perspective continues to fuel her mission to build a franchise culture rooted in transparency, partnership, and accountability.

Over the past decade, Ashley has led franchise development and operations initiatives across multiple industries including wellness, education, and hospitality. 

She has helped emerging brands scale from single-unit startups to multi-state organizations, designing systems for recruitment, onboarding, and ongoing support that protect brand integrity while accelerating growth.

At Hubcap Grill, Ashley brings structure and humanity to expansion. She works closely with each qualified operator to align goals, streamline discovery, and prepare them for long-term success. Her hands-on leadership ensures that every franchisee not only understands the model but feels genuinely supported throughout their journey.

Vince Wilson is the driving force behind Hubcap Grill’s franchise buildouts and operational execution. As The Master Mechanic, he brings the precision, structure, and leadership required to turn development plans into thriving, high-performing restaurants that stay true to the brand’s original standards of quality and craftsmanship.

With more than two decades of experience across construction, manufacturing, importing, and franchise development, Vince has built a reputation for delivering results from concept to completion. His career includes managing large-scale projects across the restaurant, education, wellness, and commercial industries nationwide. Before joining Hubcap Grill, he served as Director of Construction and later as Director of Franchise and Project Management for a national education franchise, overseeing 47 developments and creating a procurement system that lowered buildout costs while improving franchisee profitability.

Earlier in his career, Vince owned and operated a precast manufacturing company in Fort Lauderdale, producing and exporting architectural components for luxury residential and commercial projects. This hands-on experience in manufacturing and importing gave him deep insight into supply chain management, material quality, and value engineering—all of which now guide Hubcap Grill’s franchise construction program.

As a licensed general contractor and builder, Vince oversees every phase of site development, including selection, design coordination, permitting, construction management, and FF&E procurement. His comprehensive approach ensures each new franchise location is delivered efficiently, cost-effectively, and to the highest professional standards.

Vince’s leadership provides franchise partners with the confidence that every detail of their buildout is handled with excellence. His experience and dedication ensure that Hubcap Grill’s expansion remains steady, strategic, and reflective of the craftsmanship and care that define the brand.
